yes hire an assistant. you already committed to those children + their families.
my israeli SIL gets 30 nis an hour as an assistant.

For five babies an assistant is reasonable, especially when one is your own. You are much more attuned to your own baby, and he will inevitably get more attention than the others. You can gave the assistant come half an hour after you start, and have her leave slightly early if you want to save a little bit.
A good rule of thumb is to ask if there was an emergency, could you get all the children out on your own? If not, you need help.
