Soft delicious meat/roast - not sweet

Pretty pretty please help me with your easiest and most amazing meat recipes.
I prefer savory. Definitely not too sweet. And butter soft!

Exact recipes/instructions would be so appreciated

1 4-6 lb. brisket
1 onion
1/4 c. ketchup
salt, pepper
1 pkg. onion soup [4 servings, I.e 4 tsp. Or more. ]

Line pan with foil. Place a sliced onion on bottom of pan. Season meat with salt and pepper, smear ketchup. Place on top of onion slices. Sprinkle soup mix on top and around brisket.
Fold aluminum foil around meat so that meat tightly covered. Bake 325, 3 - 5 hours. For browner top unfold foil for last 1/2 hour. (I never do that.)

Season with salt, pepper and garlic powder. Lay slices of onion and cut up garlic around and on the roast and pour some red wine over it. Put it in the oven covered at 300 for many hours
