Is there a noticeable difference in the food that's cooked in either one?
Is the cheaper version a waste of money sort of?

Prestige especially if you are buying other Le Creuset products and want matching stuff. But both of them are high quality enamel over heavy cast iron.

There would be no difference in the end results

But don't trust me - here is an fairly good summary

I have a Staub and a Le Creuset and I love them. I just didn’t want one that was made in China because of possible added toxic chemicals in the enamel.

I love my le creuset. They also have great service - The enamel on my le creuset chipped and they replaced it straightaway.

Lodge is probably half the price (maybe less?) of Le Creuset. Their regular cast iron is made in the US though I'm not sure if their enameled is. I've had an enameled dutch oven from them for probably 15 years and have no complaints.

Make sure its enameled, otherwise its not kosher (non enameled cast iron needs to be seasoned and lodge pre-seasons theirs with a vegan oil that used to be certified kosher but isnt anymore)

Lodge claims it is, but you should definitely CYLOR. (I've been eying one for years, but haven't asked yet.)
