I don't have one favorite composer, so I'll name a few faves.

Yiddish songs - Reb Yom Tov Simcha Ehrlich zt"l,
Motti Illowitz, Lipa Shmeltzer, Avrum Mordche Schwartz, Moishy Schwartz, Michoel Schnitzler, Shimshy Neiman, and more.
English songs - MBD and Avrohom Fried (actually in all languages) Abie Rotenberg
Lashon HaKodesh - Motti Steinmetz (also Yiddish,) Yossi Green (all 3 languages)

Female composers: Miri Israeli, Chayale Neuhaus

I also really like the songs of the late Shragee Gestetner, z"l
