Im looking for an amazing Yom Tov worthy finger licking delish recipe for Baby Dark Chicken cutlets that are prepared before Y"T and still tastes really good on Y"T rewarmed (no artificial ingredients, and not terribly unhealthy)?

Too tall an order?

Pesto cutlets (recipe from Danielle renov. Dip into pesto then cornflake crumbs and bake)

Grilled chicken (can do herby marinades or honey mustard or balsamic savory type)

The chicken Marsala From busy in Brooklyn’s millennial kosher is amazing. She writes it as a starter in pastry cups (Hamantasch shaped) but honestly it’s delicious over rice or mashed potatoes as a main dish too.

It looks really good but Im looking for a recipe where the baby Dark Chicken remains in large pieces so it can be put on a platter with other chicken/beef.

Marinate then grill it right before yt. Always a winner.

A simple spice mix is great. Rub with oil. Sprinkle mix evenly on all sides. Let sit 30 minutes. Bake at 425.

I like marinating with olive oil, lemon juice, crushed garlic, and pepper (I find dark chicken cutlets don't need extra salt)

I used to grill them on my grill pan but recently started broiling them for 7 minutes a side. It tastes almost the same and doesn't need cleanup. I love it!
