Compote is forgiving. You can put as much or as little of each fruit! I sometimes make it with only apples, sometimes add strawberries, blueberries or peaches depending on what I have in the house.
Put on high fire until it boils then put a smaller flame so it doesn't burn. After half an hour start checking.
Fruit should be soft enough to cut with a spoon. You can smash or leave fruits whole.
( some blend with immersion blender!)

There are a bunch of recipes on kosher.com for peach crisp/crumble. I have used nectarines instead of peaches

There is a really yummy apple peach crisp recipe that you can make for RH

cut the fruit into a pan, mix with whatever other fruit you have, I especially like nectarine/peach and blueberries. Mix fruit with a drop of sugar, lemon juice and potato starch/tapioca starch/flour. Let sit. I make my crumbs gluten free so I use a combo of oats, chopped nuts, almond flour, potato starch, coconut sugar, cinnamon, and a little coconut oil to hold it together, sprinkle over fruit, bake @ 350 until fruit bubbles and crumbs are browm

Don't peel. Use in crumble or cobbler it's delicious bc a little tart and then a sweet topping

No Mixer Fruit Cake

1 Cup Sugar
1 Cup Flour
1 teaspoon Baking Powder
1/8 teaspoon salt
2 Eggs
1/2 Cup Oil
1 Tablespoon Vanilla Sugar
2 teaspoons Lemon juice
Mix with fork. Pour into glass pie plate.
Add 6-12 peach or plum or nectarine halves with the skin. Smoosh them in to fill the pan.
Bake @ 350 for about 1 hr or middle is set.
