What to do with canned beets?

Operating on an extreme time crunch. Bought canned beets. Anything I can do to make it more appealing?

I just stick them in a bowl Smile
Most ppl in my family won't touch it anway. One son and I will eat it.

I incorporate them into a lettuce salad. I add red onion, Tinned mandarin and some craisins too.

I like to eat them diced, mixed together with diced onion and mayo and salt. Sometimes I also add diced boiled potato and/or canned peas. DH and kids think it's gross.

This sounds doable! Without the onion because we don't eat onion tonight. Do you dress it?

I would use a balsamic vinaigrette on them, drained from the can. If you don't use vinegar on RH (I do), you can also use orange juice and a splash of olive oil.

Just make a diced beet salad with salt and garlic powder. You can add a tiny bit of lemon juice for that tang.

This might not work for RH depending on minhag but I have a purple cabbage salad with green olives, with a cumin dressing and diced beets are really nice for that. Or save them for Shabbos and make a feta salad for shalosh seudos.
