1. After shredding in food processor, there is excess water. Should I drain out that water?
2. Any secrets to freezing well? Should I freeze raw or cooked?

1. Keep the excess water, it adds starchiness.

You can freeze either raw or cooked. Raw tends to get brown since it takes a while to freeze.

1. Yes, drain water
2. I bake kugel, then freeze (cover tightly with aluminum foil.) Before reheating, put a few tablespoons of water on the top of the kugel & bake till hot. Delish.

Oh, wow. I always thought it was best to drain the water. Will try stirring the water into the mixture next time.

It works both ways. People like different textures. I enjoy the fluffy gumminess.

Bake 2 hours covered double wrap and freeze.
Overnight it before eating- bake under a pan of water on 200’ overnight

1. I do not drain- but I also dont add water or seltzer like I know some people do
2. I freeze almost fully bake
top is lighter golden brown
I double wrap in freezer
remove and defrost a bit
then add some oil and reheat on low temp for a while

Why would you freeze Potato kugel?
Its so much better when fresh.!

I don't drain.
I add seltzer at the end.
You can freeze potatoe kugel. Put into freezer raw, and when its frozen cover it.
On Friday, take out of freezer, spray with Pam and bake on 500 straight from the freezer. (do NOT defrost). Lower heat to 400 and continue baking until done.
