I want to make veggie sushi, but I'd be bringing it to my in-laws a few days before yom tov. Anything else that I'm bringing will be frozen in a cooler, and we'll transfer it to their freezer/fridge when we get there. Can I freeze it?
What about gefilte sushi? Will that freeze well, since it doesn't use rice? (Yes, it's a real thing. And it tastes surprisingly good.)

I don’t know what gefilta sushi is but I imagine veggie sushi will taste weird once defrosted. What I would do is bring all of the components separately (keep veggies whole) and assemble right before the meal.
