Can you explain what the seltzer does?
I make a good kugel and always get compliments but I don’t mind a change.
Also if I don’t have plain seltzer could I use water or water with a drop of baking soda?

Some people say it makes it a bit fluffier I don't know, I know some rebbetzin who makes challos with seltzer.

It does make it softer/fluffier
I use more than the suggested amount lol. But dont ask how much - I just pour:)
Adding some zucchini also creates a softer texture

I just tried seltzer this week. Don't tell anyone... I used lemon flavored. It was softer!
