Make regular foods that don't have flour in them. Any potatoes, any rice. Use tamari instead of soy sauce. Any chicken or meat. Bread with gluten free cornflake crumbs (Gefen) or other gluten free crumbs. Same with fish. Desserts can be ice cream, ices, compote and more. You'll be surprised how much good food you can have!
You can always use your regular cake recipes substituting gluten free flour mix for the flour.

Pretty much what Gnesha said. If you tell us what you usually make we can tell you how to make it gf.
I use La Choy soy sauce and teriyaki sauce. I haven't seen the gefen gf corn flake crumbs in months, but theres Landaus and Jasons. A lot of heimish hechsher items say kosher for passover and all year round.
We do a lot of veggie dishes, chicken, meat. Abes makes yummy gf parve ice cream for dessert. Or I make some of my pesach dessert recipes.
You can buy gf gefilte fish rolls, cook them like regular. Or any raw, unseasoned, unbreaded fish is automatically gf.

If you have any recipes calling for just a little flour as a binder, you can use potato starch or tapioca or corn starch instead. Jamie Geller's potato kugel is gluten free. Really, yom tov food is forgiving. Mostly, remember about checking your soy sauce and checking the ingredients on any prepared sauces. There are plenty that are fine, including many of the Mikee's ones- you just need to check.
For desert, baked apples are great. If the person can have oats, you can make a nice crumble.
