I just made up a new thing. I had some yellow potatoes. They were on the small side so I didn't cut them, but if they were larger I'd have cut them a bit. I left peels on. I sprayed the pan with cooking spray, put the potatoes down and seasoned them (I used the TJs bbq seasoning this time) and then placed chicken leg quarters on top. Put same seasoning on and baked , covered, at 400F for 1-1.5 hours (until meat thermometer showed done).

Peel and cut potatoes into chunks. Lay in pan. Place chicken pieces on top. Mix about 1 cup duck sauce, 1/2 cup ketchup, 1/4 cup olive oil, bunch onion powder, pepper. Pour on top. Cover bake 350 then uncover to brown.

I do similar. I skip the oil tho.
