Do you use Bread flour or High Gluten flour?
What is the difference?
Which one yields a fluffier challa?
I always used bread flour but I met a friend in the store who told me she switched to high gluten and it's so much better. So I decided to try it .
I mixed the dough using my regular recipe but when I tried to remove it from the mixer to put into a bowl to rise, the dough felt very tough. Like extremely so. Will my challa be hard?

I add gluten to regular flour. (Rubinfeld baking enhancer, for those of you in Israel)

That's probably because the high gluten content gives it that extra elastic. I guess that makes it "harder" before it rose. I use high gluten and my challos come out huge and ultra fluffy-like the ones called "heimish" in local bakeries in the tri-state area, if that helps.

Can you please share your recipe?
My family loves it sweet and chewy lol and I hate it like that. I always use HG flour, so that alone doesn't guarantee fluff. For a year I've been trying to work on the perfect compromise recipe and still haven't quite nailed it. I'd love to see your proportions before I develop my next test recipe!

Just an update, the challa had an amazing texture once it rose. It was super easy to work with.
Now let's see how it will taste..

Ok I had to come back and post.
We finished our first seuda and the challa was incredible. Literally so good.
I have my answer about HG vs bread flour...

I'm not sure there's much of a difference. I use high gluten flour but have also used bread flour.
