My in-laws are going to be spending yom tov in a house in the Catskills. I offered to help my MIL make some of the food, and she mentioned the biggest need is for food for the troops on Erev YT when everyone is hungry. There is no milchig oven in the house they're renting.

Any ideas?

You can buy frozen mini knishes & just bake it in oven.
Chicken nuggets
Frank's & blanks frozen just bake
Potato kugel
Cut up fruit
Frozen shlishkes baked with a little oil
Deli roll make with pre rolled flaky sheets
Apple strudel made with with pre rolled flaky dough
Lukshen kugel
Apple turnovers
Roasted potatoes
Baked apple
Farfel
Frozen fries
Yerushalmi kugel
Kishka
Baked potato/baked sweet potato whole with peel
Couscous
Frozen mini eggrolls
Roasted veggies
Stir fry veg
Broccolli kugel
Apple or cherry crumble/cobbler

I like preparing a beef and potato stew in the croc pot the night before and leave it on warm all day so everyone can serve themselves as needed. Other options are potato kugel, apple kugel, farfel, cut up fruit, apple sauce, cold cut sandwiches...
