Night - soup and challah.
Day - leftover meat, mashed potatoes, salad.
We'll also make a honey cake.

Zehu, we have no time to cook and I have no energy anyways.

Y'all are so fancy. Is it because I don't do enough, or just a culture difference?

I haven't made a menu for Shabbat chol hamoed yet, and I haven't even thought about the last day.

Probably a culture difference. We're makpid on fish and meat at every seuda, and soup at night, so it's a given.

Sorry it took so long….

STICKY CHICKEN
8 drumsticks
Pepper
Garlic powder
Onion powder
1 jar apricot jam
1/4 c teriyaki sauce
1 TBSP brown sugar
1 tbsp corn starch
1 tsp apple cider vinegar

Preheat to 350°

Place chicken in 9x13. Season with spices. Cover, bake 45 minutes.
Combine sauce ingredients. Pour over chicken, bake uncovered 45 minutes.

STICKY BBQ DELI AND ONION SANDWICH OR SALAD (from pl&c- I’ll give you her recipe, and tell you my adaptation)

1lb assorted cold cuts, cubed
1 TBSP oil
1 large onion, diced
1 jalapeño, thinly sliced (I skip)
1/4 c any bbq sauce (I use sweet baby rays honey bbq or sweet and spicy)

Heat oil in large skillet. Add onions (and peppers if using) stirring often, cook 12-15 minutes. Add cold cuts, cook another 6-8 minutes. Pour on bbq sauce (I never measure, I just pour on lots and lots!!) stir constantly for 3-4 minutes, until sauce reduces and gets sticky.

You can serve in or with salad, or in a sandwich, but my children literally stand over the pan and eat it!

GRILLED CORN AND PASTRAMI SALAD (from real life kosher cooking)
6 ears corn, grilled
6oz sliced pastrami, grilled (I don’t grill it)
1 c cherry or grape tomatoes, cut in half
1 avocado, diced
1/2 red onion OR 1 large shallot, diced

Dressing:
1/2 c Mayo
1 TBSP mustard
1 TBSP lemon juice
1 tbsp garlic powder
1/2 tsp kosher salt
1 tsp sugar or other sweetener, optional

Cut kernels off corn cob, place in large bowl. Cut pastrami into thin strips, add add vegetables. Combine all dressing ingredients, pour over salad, toss to coat.

Personally, I’m not Malkie on anything, but my husband insists on fish at the night meals, and some sort of meat appetizer. I’ve been married 15 years, have been making pesach and succos at home for at least the last 5 years, and I never realized about the meat until he pointed it out last night. What always happens is that I make my menu, and then he comes and adds whatever, so I don’t always connect it to my menu in my head, even though it gets written down. Also, even though technically it’s meat, I don’t consider a meat salad to be “some kind of meat” appetizer.
