Friend: can u do XYZ today? (Unreasonable favor on on erev yt)
Me: no I’m sorry I can’t
Friend: sorry for asking

Do I write “it’s ok” or “you can always ask” cuz she apologized even thou it’s not really ok?

You said no. She accepted it. What's the problem?
I wouldn't answer or just say good Yom tov:)

It depends on her general behavior and on your relationship. One person might have meant, oops, I overstepped my bounds, and another person might be passive aggressively trying to get you to feel bad. I'd send back a vague emoji or just good Yom tov and leave it at that.

You don't need to answer anything. If you feel like you must, just answer gut yom yov.

If you answer you can always ask then you are inviting her to make more demands/requests next time.

I would answer cordially "No prob!" regardless of the tone of voice she used.

Same.
I would respond “no worries. Have a good Yuntif “

Indeed. "Sorry I asked" doesn't sound like she's actually sorry; it sounds like she's angry that OP said no.

I'd simply say "chag sameach" and leave it at that.

Just answer, “no problem. Have a great yom Tov.”
