I do kreplach or something similar on Hoshana Rabba. I remember because it's associated with days we "wave/strike" things. Erev YK (kapporas), Hoshana Rabba (Aravos), Purim (Grogger/wiping out Haman's name). These are also days associated with din/judgment. And the idea is to seek Hashem to deliver judgment within kindness. This is symbolized with red/meat inside white/dough.
