Ive tasted a really good kugel, which really seems like a cake to me but was served alongside the main dish.
From the bottom it had a layer of crumbly cake, layer of apples, then crumbly cake and apples and then had crumbly cake on top.
Does anyone have a recipe for this?

I do apple crumble with a thick layer of crumbs, the pie filling and another thick layer of crumbs. No cake.
I use a can of pie filling or mix up my own apple layer.

The first Bais Yaakov cookbook has a recipe for strawberry apple crumble. You can omit the strawberries and just use apples.

That sounds like Yom Tov Layered Apple Kugel from Balabusta's Choice. Here it is. Feel free to half the recipe, it's huge.
Crumble:
6 c flour
2 c sugar
2 t baking powder
1.5 c oil
2 eggs
2 T vanilla sugar (I use extract and white sugar)
Apple filling:
18 apples, coarsely grated (I slice in the fp)
1.5 c sugar
2 t cinnamon
Mix crumble ing until crumbly. Divide into 3 parts.
Mix apple filling ing. Preheat oven to 350.
Layer: crumble, apples, crumble, apples, crumble.
Bake 1 hr, or until done.
Enjoy!

A bit delayed, but here is a delicous and easy recipe from the old bobov cookbook:
5 Layer Apple Kugel
Crumbs:
4.5 cups flour
1.5 cups sugar
2 eggs
1.5 tablespoons vanilla sugar
1 1/4 cups oil
1 tablespoons baking powder
Filling:
12 cortland apples, peeled and grated
1 1/4 cup sugar
1 tablespoon cinnamon
Mix dough ingredients until crumbly and divide into thirds.
Combine apple filling and divide in half.
Put one third of dough on bottom of 10×16 pan and top with half of apple mixture. Layer another 1/3 of the dough, then other half of apple mixture, and then the last 1/3 of the crumb mixture.
Bake at 400 for at least 1 hour.

Apple Crumble
2 cups flour
3/4 cups sugar
1 tsp baking powder
1 tbsp vanilla sugar or 1 tsp vanilla extract
1/2 cup oil
1 egg
1 can pie filling
Combine all ingredients and pinch to form pea sized crumbs. Spread half of the crumb mixture on the bottom of a 9" round pan.
Spread filling over the crumbs.
Top with remaining crumbs.
Bake for 1 hour - 1 and 30 minutes.
Or you can slice 4-6 apples and toss 1/2 tsp cinnamon, a sprinkle of cornstarch, a few tablespoons sugar and splash of lemon.
Double recipe for a 9x13 pan.

Thanks so much! I assume the 9" round would use 3 apples, the 9 X 13 pan would use 6 apples?

The 9" round pan uses between 4-6 apples, depending on size of apples.
