GF challah/bread recipes

Hi I'm new to the celiac world. My son was recently diagnosed with celiac and I'm looking for recipes to replace my regular challa.
I made the Rorie gf oat mix but I'm looking for something more similar to regular challah or bread. Does anyone have tried and true recipes that their little kids like?

Ive tried a bunch and rories is by far the tastiest

If you can get a hold of the blue bag of molino gluten free flour from Israel that tastes the most like real bread just doesn't rise as much

Molino is a type of flour or a brand?
Is there something in the US equivalent to this?

We have found that shibolim oat matza is the best, but not all celiacs can tolerate oats.

Only oats can be used for hamotzie challah. You can't use just any gluten free flour mix. It's got to be 51% oats at least in order to wash and bentch.

Excuse my ignorance which aspect of chinuch does this fall under?

Why does my four year old need to eat oat challah he doesn't like?
Chinuch for this particular son is largely focused on "v'nishmartem meod l'nafshoseichem"
