Elizabeth Kurtz's Everything but the bagel chicken.
Baked schnitzel. Fried effect without tasting fried: Mix 1/2 c. oil and 1/3 c. flour (you can safely use ww or any other kind) and seasonings. Dredge cutlets in this mix, then coat in cornflake crumbs and bake. Sorry I don't have exact proportions and times.

Mrs. Weissman's on instagram is delicious. Marinate in italian dressing. She says for a few hours but I found 1/2 hr to be perfect. Coat with breadcrumbs. I make a combination of breadcrumbs and cornflakes crumbs. It's soooo good.

On what temperature and for how long do the cutlets need to bake? Do you spray with oil?

My favorite is marinating and grilling.
Marinade: (I don't know exact amounts, feel free to adjust)
1/4 c oil (olive or canola)
3 frozen cubes garlic, or cloves minced
1 T honey
1 t Montreal steak seasoning (if you don't have this it's fine, just use pepper or omit completely)
Salt
You can also do oil, honey, soy sauce.
Marinate in a Ziploc bag for a few hours or overnight. Grill. Enjoy!
