I’ve made the sweet and sour meatballs from bais Yaakov cookbook with mixed chicken and beef grind - DELICIOUS!

I do it the same as regular meatballs. It tastes a little different but still delicious.

It's delicious. Just a little sticky/harder to work with. I find that when I mix in the seasonings it's really sticky so after I refrigerate for 30 minutes. Then it's a bit easier to form with clean gloves.

Sam was any other meatballs , they are just a little stickier to work with so I add a little extra breadcrumbs.

I just embrace the stickiness and my meatballs aren't round. I don't care enough, they get smooshed as you eat them anyway.
