I was thinking it would be super helpful to have one comprehensive thread for this Smile

What are your favourite recipes for making things like kibbeh, lachmagine, sambousek, etc.? (Dairy, pareve, and meat recipes)

Lachmagene
Mini pizza doughs
Chop meat
Prune butter
Ketchup
Cinnamon
Allspice
Lemon juice
Onion grated

Bake 350’ 25 mins

**Be generous with the sauce mixture

Empanadas
Won ton dough
Break up the neat and then sauté
chop very small- red pepper, olives, mushrooms. Add to meat
Add tomato paste
Spices- turmeric, salt, pepper, garlic, paprika, cayenne

Cook for a while until all juice is evaporated

Wet wrapper, place a spoon of meat mixture in center, close tightly and Fry

I'm actually looking for a recipe for calsones. Like the dough with cheese with noodles. If anyone has please post!

Ravioli dough
Cheese mixed with eggs and baking soda

Wet and pinch together

Boil ravioli as well as egg noodles

In a Pyrex add pasta, salt and generous amount of butter Bake on 350’ until crispy.

Yum, my best pasta!!!

For lachmajeen, I'd recommend dropping the lemon juice and adding tamarind.

I'll IYH update with more recipes but my issue-- which I'd suppose many have-- is that I go by look, taste, and feel, so the recipes are just an approximation.

Here's a very forgiving recipe for samosas. You can use anytime you have leftover mashed potatoes and/or want to get rid of frozen or canned veg.

Vegetable samosas (sambousak but the Indian term)-
Samosa dough (similar to pizza rounds)
Bag of peas and carrots (can have other veg) defrosted (can also use canned peas with other veg, just drop some salt)
Mashed boiled potatoes (or leftover mashed potatoes)
Sauteed chopped onions
Garam Masala
Minced fresh ginger
Minced fresh garlic
Turmeric
Salt
Fresh lemon juice
Depending on your Garam Masala blend, you might want to add extra cumin and/or cinnamon.

Mix up everything but the dough. Put about a tablespoon of the filling into each dough round. Use a little water around the edges and fold the dough over itself to seal shut.

Fry until each side is golden.
