What's the halacha with opening your own business (in the same line of business as you were employed at for a few years) and then reaching out to people you used to work with and offering them a job?

Check your contract from your previous job, many of them have clauses related to this.

If they’re still working there I would imagine it’s completely against Halacha

I don't know what the halachos are, but that's not a very ethical thing to do. Opening a business comes along with the work of finding employees. Taking away employees from someone else is taking the easy way out.

Same situation here. I'm waiting to see if she will leave on her own which is a big possibility then I would offer her the job.

Probably a question of hasagas gevul (encroaching on someone's territory) and will vary case by case. Ask a posek who's very learned in these halachos. Your LOR may not be.

My company wont do a direct hire from their competitors. Either the person worked elsewhere for a few years or was a SAHM for a few years.
