Just made this for supper tonight .
Take frozen brocolli. Defrost or rinse a bit.
Cut into large pieces.
In a bowl, beat 5 eggs and about half cup of mayo. Add OSM and a bit of salt, black pepper.
Mix in the brocolli. Pour into Pyrex dish. Sprinkle breadcrumbs on top. Bake.
This isn't strictly a quiche, but you can probably pour this into a pie shell and do it the same way.

I was going to post this recipe. It's moist and delicious! Made kugelettes in muffin tin with this recipe, and they came out great too.

There's no amounts. I just poured a bit.
For one bag of brocolli I probably use 1 Tablespoon.
You can also use different vegetables for this. Just increase the egg/mayo mixture if you have more veggies.
