Has anyone ever made hummingbird cake? Was it good? It looks easy.
I was thinking about making an even lazier pareve version, just a single layer in a large rectangular pan. Without any frosting, just to eat as a breakfast or snack, like banana bread. Or maybe make one big single layer as a cake, but with the pareve vanilla frosting that comes out of a can.

Never made it. Looks interesting and I'll assume a safe recipe to risk if you like that kind of thing.
I've used tofutti for cream cheese frostings.

That is a family favorite...Shavuos special, have given to kiddushim etc. And people love it. I use the Southern Living recipe you posted. I add shredded sweetened coconut on top of the frosting and it is always a huge hit. This year I made individual ones with parve cream cheese frosting for 2 Sheva Brachos, and that also worked out great. People ask for the recipe all the time...
Highly recommend!

That looks yum! I'd definitely sheet pan that.
I'd either cut the recipe in half, or cut in squares and freeze anything I couldn't eat within a week. Moist cakes go moldy pretty fast. (Of course if you have a family of 10, it will be gone in a day.)
I'd freeze the cake unfrosted. Before serving, frost the squares before they are fully thawed out. It seems easiest that way.
