Looking for a soup recipe (besides chicken soup) that doesn’t need to be blended...

Pea soup:
Pour in a bag of split peas (not the seasoned ones)
diced carrots
diced potatoes
salt, pepper
onion soup mix
a drop of chicken soup mix
cover with water
bring to a boil, then cook on a low flame until the peas dissolve
Make sure to keep mixing, or else the peas will lump together on the bottom

Mushroom barley-

Saute onions, celery, carrots, garlic till softened. (I add salt, pepper, and thyme for seasoning.) Add two boxes sliced mushrooms and saute a bit longer, then add chicken stock (you can use soup mix + water) and a few handfuls of barley. Bring to a boil and cook about an hour.

Lentil tomato soup

I just made this and DD is enjoying it as we "speak".

1 large onion chopped
4 or 5 garlic cloves chopped
1 c green or brown lentils
2 bay leaves
A pinch of hot pepper flakes (optional)
16 oz can of chopped tomatoes.

1 pkg baby arugula or baby spinach (3-4 cups)

2 tsp wine vinegar or apple cider vinegar

Saute onions until soft then add garlic and continue sautéing until everything g atart as to turn golden on the edges. Add spices, tomatoes and 10 c water or broth or a combination (I often do half and half). Simmer until the lentils are veey soft and starting to fall apart. Add the greens. It will look like lot but it wilts quickly. As soon as the greens wilt add vinegar.
Taste for salt (depending on whether you use water,broth or a combo you may need more or less).

This freezes beautifully and is also very pretty.

SPLIT PEA SOUP

1 bag green split pea
2 to 3 carrots, diced
3-4 stalks celery, diced
1 onion, diced
1 small potato, sliced thin
6 cups broth or water
1 bay leaf
2 T coconut oil (optional)
1 T smoked paprika (optional)

This can be cooked stovetop or in a pressure cooker; I prefer the latter

This is a home made soup mix that you use a food processor for

But you can make 10 batches of soup (that don't need more blending):

2 lb Onions

1 lb Carrots

1/2 pkg celery or a small celery root

1 large zuchinni

1 large Parsnip

1/2 head garlic (about 8 big cloves)

1 large bell pepper (any color)

1 Medium Turnip

(Optional: 2 large potatoes - if not watching carbs)

Process onions. Saute for 10 minutes in a pot.

Meanwhile peel and process the other vegetables.

Then add to pot.

Saute for 45 minutes, stirring occassionally so bottom does not burn.

When cool, put into 10 sandwich bags and freeze.

To make soup.

Add one bag of soup mix to 2 containters (quarts) of water.

Add some salt and pepper.

That is for plain soup.

If you like veggies in your soup you can add frozen vegetables: Mixed vegetables,
broccoli, caulliflower, butternut squash, etc.

Also can add cubes potatoes, sweet potatoes, sliced carrots.
