My son is requesting potato kugel with a black top/layer like at the store. Any ideas how to get it like that?

When you put the pan in oven, pour hot water all over the top of the kugel. Bake at 450 for 1 hour and then lower it to 350.

How much? I'm assuming it doesn't get watery?

Broil the kugel for 10 minutes, then bake 1-2 hour at 400.

Mine gets very dark on top all the time. I bake it at 425 for an hour and a half.

The best way is to heat up 1 cup oil and pour it over the kugel and mix in slightly.
Then bake 425 for 1.5 hours
For 5 pounds of potatoes

I pour about 3/4 cut of hot water. Do it when the pan is in the oven already (water stays on top and gives the kugel a nice crunchy top)

Follow the directions exactly and you will get a very dark, ultra crispy top every time.
The Ultimate Potato Kugel
Author: Esty Wolb
Ingredients
* 5 lbs potatoes, peeled
* 1 large onion
* 5 eggs
* ¾ cup oil
* 1 Tbsp salt
* Black pepper to taste
Instructions
1. Preheat your oven to 450°F
2. Process the onion using the S blade of your food processor, scraping down the sides of the bowl midway to make sure it is finely pureed. Switch to the Kugel blade and process the potatoes. No need to empty the bowl in between onion and potatoes.
3. Working quickly, crack the eggs into a bowl large enough to hold all the batter. Add the oil and seasonings and mix well. Add the processed potatoes and onion and mix until uniform. Pour into a greased 9x13" pan and bake uncovered for 2 hours.

I bake mine uncovered on 450 for an hour, then 350 for an hour and half. Always has a dark top.
