I have no experience freezing suppers.
Can anyone suggest recipes that freeze well?

Things with sauce freeze really well (meatballs, sesame chicken).
I freeze lasagna after baking.
I also freeze hearty soups and chili that are all in one meals.

All kinds of chicken all ready seasoned - chicken legs frozen in a pan, cutlets in a ziplock. Freeze raw and put in oven fresh the day of use.
Meat patties, meatballs - make the mix, form the balls, freeze raw. I've also frozen them all cooked and in the sauce. They're slightly mushier when defrosted but still good.
Side dishes we mostly do fresh but you can buy ready frozen vegetables, toss with oil, salt and pepper and roast. Kugels can be frozen, if you go for that. Broccoli kugel, mixed vegetable kugel, even potato kugel for Shabbos.
Soups officially come from my freezer. I make huge soups whenever I have the time and freeze them in containers according to the size needed for my family.
At any given time my freezer also has lukshen and knaidlach for Shabbos chicken soup, ready home-made techina, challos, and cakes.
Most things if frozen completely airtight in a storage type freezer (as opposed to a freezer that's open and closed multiple times daily) will last a few weeks, even a few months.

To prevent freezer burn the only solution is a good non frost free freezer. Some people prefer the frost free as it doesn't involve the twice yearly defrosting hassle, but the non frost free is better in terms of freshness of the food.

I try to avoid freezing soups with chunks of potatoes. I once did it and it wasn't too bad. Depends on how particular you and your eaters are. But other vegetables do fine, some with a softer texture, but overall delicioius.

If I am making meatballs in a sauce - can I add spaghetti to the sauce and freeze?
If I am making chicken in sauce - can I add rice and freeze? or add potatoes to the sauce and freeze?

Mix together chili powder, cumin, smoked paprika and salt.
Brown ground meat with half the spices. Then remove.
Saute onion, add in diced green pepper and garlic and saute a bit longer. (I also put in a diced jalapeno for heat- optional.)
Add back ground meat, a can of fire roasted diced tomatoes with liquid, rest of the spices, and two cans drained pinto beans/ kidney beans.
Bring to a boil and simmer for 20-25 minutes.

Frozen green beans, cauliflower, broccoli, mixed red/green peppers(for stir fry)
Pasta and rice freeze well too.
Lo mein, lukshen kugel, potato kugel, lasagna...
I like to have meat sauce in the freezer and just make fresh pasta.
(Make sure to have well stocked pantry too! Canned baby corn, chickpeas, hearts of palm, tomato sauce, canned pickles and olives...)

anytime I have leftovers I freeze, then at least once a week I pull out a frozen supper...
Shabbos we were all away...Sunday night (no leftovers in the fridge) I pulled out pan of chicken stuffed with kishka, roast potatoes, a bit of meat and a frozen container of soup.
tonight I made fresh baked potatoes but pulled out frozen soup, schnitzel, farfel and chicken on the bone.
whenever I have even a little bit (two triangles of chicken left in the pan) I freeze it in a 9 by 13, label and then keep adding. once it's enough I write "complete supper" or "protein for one supper, add starch"
I find this really helps me saves time and saves money in the grocery!!

At least 1 type of hearty fleshig soup
Chicken soup
Quiche
Kugels for shabbos
Chicken and veggies in a stir fry sauce
Ground beef filing for meat borekas
Meat lasagna
Dairy stuffed shells

Meatballs & Spaghetti freezes well. Not sure about rice
I dont find defrosted potatoes to be good..

Oven baked stir fry:
4 cubed chicken cutlets coated with flour, salt and pepper.
Veggies: 1 onion, 2 peppers, 10 oz sliced fresh mushrooms, 1 bag frozen broccoli, 3 stalks celery - everything cut into bite sized pieces. (I use whatever I have in my freezer)
Sauce:
3/4 cup duck sauce
1/2 cup water
1/4 cup oil
3 tbsp soy sauce
3 tbsp BBQ sauce
1 tsp fresh ginger or 1/4 tsp ginger powder
1 large clove crushed garlic
Optional hot pepper flakes
Bake at 425 covered for 35 min, then another 15-20 uncovered.
If you use frozen veggies and forgot to defrost ahead, just bake longer with extra liquid, covered, and stir every so often.
