I kind of want to get back into baking challos every week (okay I’m officially crazy. I got a toddler and newborn to keep alive lol!) but I lost my recipe. I’ve looked all over my apartment:(
I love sesame seeds as toppings so looking for something that would taste savory!! Not too sweet but not salty just RIGHT.
Since Friday is early shabbos I’ll iyH make them on Thursday.
(I want to make 3 loaves and if I have extra dough it will be a small roll.)

The Best Challa
1.5kg Challa flour
2 0z. yeast
3 cups warm water
3 egg yolks
3 TSP salt
1\2 cup sugar
1\2 cup oil
Instructions:
Place yeast, one cup water and a sprinkle of sugar in a bowl to bubble.
Place flour in the mixing bowl. Make three indents with the tsp and add salt. Place yolks over salt. Add sugar oil and remaining two cups of water. Add bubbly yeast. Mix for ten minutes. Let rise for an hour in a floured bowl with a towel on top.
Take Challa without a brocha.
Divide in four. Plaid Challa.
Rise until double.
Mix an egg and brush Challa with egg and sprinkle tons of sesame.
Bake until crispy. Take out of pan and turn over Challa and bake the bottom.

You can do any Challa recipe by hand. The more you knead the fluffier it gets.

It very much depends on your taste. I highly recommend "The Blessing of Bread" by Glezer. LOTS of different recipes, organized by level of sweetness.

Looks like a nice recipe. My guess is it's too sweet for OP.
Sorry I don't have a recipe. I use a 5+ lb. recipe and don't know how it would come out proportionally reduced. I do it by hand too. Proof the yeast, mix all the other ingredients besides flour, combine the two, then add to the flour and knead.
