I add onions, mushrooms, whatever other veggies I have in the house to them.
Baked french toast is simple. Leftover challah from shabbos (sliced up), 6 eggs (well beaten), cinnamon (to taste, we use a lot) and a dollop of vanilla mixed in. Dip the slices into the egg mix, saturate a bit (can use water to thin the eggs a drop) and then lay flat in a baking tin (make sure to spray the tin w/ nonstick spray). Layer... bake at 350 for a hour, done and enjoy.

I add in whatever different forms of mushroom I can find at the supermarket and will even throw in some imitation crab. Enjoy!

Tofu curry with rice, black bean burrito bowls, red lentil coconut stew with rice, quinoa wi roasted veggies and pesto, seven layer dip with tortilla chips. Walnut mushroom chili over baked potatoes
