I really want to try to make latkes this year but I'm scared to make a fire! How do I do it? Any simple recipes?

What do you mean about making a fire? You fry it on the stovetop, same as all other cooktop cooking.
You just need to be careful not to get any water droplets into the pot of hot oil.

I have started making potato latkes in the betty crocker pizza machine. I use the round parchment paper (make sure it's kosher or vegan) to keep the machine clean. I use my regular latke recipe, but I put in 2 tsp. oil into the batter. No flames involved and uses way less oil so it's healthier as well.

I am always on the alert when I cook things in a frying pan. I make sure there are no towels, napkins etc near the stove. I wear do not wear loose clothing or bell shaped sleeves etc if I am wearing a cardigan I make sure it is buttoned and not hanging loose. Do not do this sort of cooking with little kids wandering around, for sure. Taking these precautions makes me feel more safe.

However, if you really are too nervous, you can always buy frozen ones to heat up in the oven.

I discovered the BEST way to make latkes! Low oil, and super crispy.

Make your latke batter as usual. Get a brush and oil, or pan spray, and liberally oil your WAFFLE MAKER!

Cook until done. It works great with sweet potatoes, zucchini, or any combination with potatoes.

You really can't get safer than that, and the edges are so yummy and crunchy.

If you make the latkes in a very thin layer on the waffle iron, you can get them crispy all the way through. If you put the batter in a thicker layer, you get the soft puffiness inside.

Once you try this method you won't want to cook them any other way.
