Recipe Please?
Whats the best veg to use for this?
Cauliflower?
Celery Root?
Kohlrabi?
Turnip?
Which one will come out crispy on the outside?

I made keto zucchini fritters all last Chanuka and really enjoyed them.

Google around for a recipe that looks good to you.

I put feta cheese in mine for extra goodness.

Grate raw zucchini, squeeze out the water, works well. If you're not going carb free add a small grated potato. Cauliflower makes delicious latkes too but you have to cook first and mash. No need to add potato, matzo meal or any carb, you can use just mashed cooked cauliflower, eggs, salt and pepper.

Low carb or no carb?

Low carb:
4 small zucchini (the big ones are sometimes bitter. If you can get the small ones they're much better)
1 medium brown potato
3 eggs
1 tsp salt, divided
1/4 tsp pepper

Wash zucchini, peel halfway, leave some peel on. Grate coarse blade, sprinkle with half teaspoon salt, mix, let it sit in bowl.
Beat eggs with half teaspoon salt and pepper. Peel and grate potato, add to eggs. Squeeze water out of zucchini, add to potato egg mixture. Fry in hot oil. Don't crowd the pan. Put a chunk of raw peeled carrot in the oil while you're frying. Drain on paper towels. Serve fresh. Not as good but you can freeze in a single layer, remove from freezer put straight into a hot (425') oven.

Carb free:
Same as above, use 5 zucchini, no potato.

I make them with frozen riced cauliflower. There is no need to precook. Just let it defrost. I dont have the recipe on hand but it is pretty much cauliflower and eggs. Delicious.
