Gas or electric oven - which is best for baking ?

Most oven are electric now because they provide the most even heat.

Higher end stoves are generally dual fuel with an electric oven and gas top of the person wants a gas range.

I don’t know anyone who doesn’t have electric wall ovens even if they have a gas cooktop.

An electric oven offers even baking and shorter baking time than gas which is great for baked goods. I liked better the gas oven for roasting meats and chicken, because it doesnt dry out the food as much.

Gas ovens are moister. This is an advantage for roasts such as roast chicken and also for bread. Electric ovens usually heat more evenly.

There are very few gas wall ovens on the market and most are high end. For ranges, all gas is less expensive than dual fuel.

Why ? Trying to figure out my options
I see very few gas ones online debating if to go with electric instead
(Not looking for stove top strictly Wall oven only)

I have the same model gas wall oven and electric oven. The electric oven takes 2 times as long to preheat than gas. Once it's on I don't see a difference

Higher end kitchens are now installing a steam oven to provide moist heat.

The best ones are plumbed but they have less expensive ones which have a compartment you fill with water.

It is supposed to replicate a brick oven like the French use because it produces burst of steam when baking bread.

Roasting chicken and meat, baking challah, all come out better in gas ovens.
