I wanted to use food processor which has only been used for potato kugel ingredients to make latkes that I planned to fry in a milchigs frying pan. But I realized that since I cut the onions for kugel with a fleishigs knife (and onions are charif), then the blades in processor are probably fleishigs now. So that means I can't use the processor for potatoes and onions and then fry them in a milchigs frying pan. Is that right or am I mixing things up?

You are correct. Your food processor is flaishig and you would not be able to fry the latkes in a Milchig pan

Thank you! So if I fry them in a fleishigs pan instead, can we eat them at the same time as milchigs just not on the same plate or in the mouth at the same time? Like is it considered fleishig keilim or really fleishigs...

It’s flaishig kailim but I wouldn’t eat at the same time as milchigs. I can ask my husband when he comes home. He’s our (very) LOR.

I believe that since it's fleishig keilim, you can not eat it with milchig. You can have it before or after, but not with. I think you have to at least take a drink in between.
