PSA - in Israel "Gad" dairy makes wonderful Ricotta cheese - they have a few different versions. I know one is more firm, and one is spreadable.
Actually, does anyone know which would be best for this recipe? I'd love to try it.

how is this diff from regular cheese latkes?

the baking powder?

it seems like the same idea?

I use a tablespoon measuring spoon - one that is nice and round. And take a regular cutlery teaspoon, to help scoop and form the batter neatly and drop into the oil.

You can also use a small cookie scooper if that works better for you.

They are flour based with just a little cheese - like cream puffs. They taste like fluffy milchig donut balls - very delicious.

I see what you are saying. and latkes has more cheese and less flour.

do you have the measurements in grams?

the us measuring cups are diff to uk.

122 g farmers cheese
59.15 ml milk
2 large eggs, lightly beaten
2.46 ml vanilla extract
120 g flour
25 g sugar
9.58 g baking powder
50 g confectionars sugar, for dusting

If it's a very wet cheese you can use 1 cup instead of 3/4 farmers+1/4 milk.

3 eggs
1 cup flour
2 v.sugar
3 tbs sour cream
1/4-1/2 cup sugar

its not so diff to these balls besides for the bkpwd but they are not donuts?

Interesting. My latkes have 6 eggs to 1 cup flour and 1/2 cup sugar. But they would taste better deep fried then pan fried anyway!

You can buy a 1 lb package of farmers cheese - you'll have some left over.

That's sounds like a cheese batter (2 cups) with flour to bind it. But won't argue with you if you prefer latkes to donuts. 😊

no no not at all.

thanks for pointing it out.

I really wanted to see the difference. why its different.

I compared your one cup of flour and my 1 cup of flour without realising the cheese is much less in yours.

can I make and store in fridge ie serve cold? or does it have to made right before wanting to serve?
