Am I the only one who thinks it’s a little funny calling it that… I grew up just calling it chicken, vs chicken cutlets. I feel like all of a sudden it became “chicken on the bone”

Just like corn on the cob. Like that's it's original form, loose corn should be called corn off the cob.

On the bone is the original form, but so is with feathers.

It’s either bone in chicken or boneless chicken breast or thighs.

Chicken cutlets refers to chicken breast. But you can get other parts that are boneless like legs or thighs and those aren’t called cutlets. So only having two categories - “chicken” and “chicken cutlets” doesn’t cut it.

We call it dark cutlets. Or baby chicken. The chicken that's boneless but not chicken breasts.
Chicken on the bone we usually just say chicken.
