anyone uses tinned salmon for salmon cakes?
do you have a good healthy recipe with no mayo?
inc the best way to bake in the oven.
I use quinoa as a binder

I don’t really have a recipe. Last week we cooked a bunch of fish and it didn’t get eaten so yesterday I crumbled it up, added eggs and almond flour and fried them ( not deep fried, because I doubt they’d hold together) in olive oil. Big hit.
Fish: pickerel in one type and a mix of Arctic char and rainbow trout in the other.

you use olive oil for frying?
there is so many diff views on how high olive oil temperature can go. I would love to oven bake veggies in olive oil on 220 c but always scared too high?

This is my recipe
Flaked fish
Egg 1 per 4-6 oz of fish
Mayo-1/2- 1 TBSP for every 4-6 oz (could be less)
Salt
Pepper
Onion powder
Lemon pepper
Optional -
Grated zucchini - salt, sit, squeeze all the moisture
Grated carrot
Or both - or none
Form patties on parchment covered sheet pan
Bake 375 until golden
I bake until completely set and freeze - then they brown up when they get reheated
Or you can fry them
I served this on a flaxseed bun with lettuce tomato pickle and tarter sauce. My DH loved it

I don’t cook at high heat. On my stove it’s more like medium. I’m not a fan of baked but not because of temperature. 220 C Is crazy high to cook something like this on. I don’t think it’s a good idea purely from a cooking results perspective.

isn't it the temperature to roast on?
I don't want soggy veggies but nice and crisp
