Maine is gorgeous, you can go to Virginia/DC/silver spring, new Hampshire/Vermont. Start looking for cheap Airbnb's in those areas then go to tripadvisor to build an itinerary. That's how we plan our trips.

Springfield is good for what you're talking about in terms of budget and activities, and so is Hartford or West Hartford--there's a kosher market with takeout there, as well.
You might also try the Berkshires--plenty to do outdoors, and not too far. Holiday Inn Oak and Spruce Resort has condo-like rentals that are reasonably priced at this time of year. You can drive through Springfield or Hartford to get there, and potentially Waterbury depending on where you're coming from. There's food in Waterbury as well.

Yes we spent 5 days in Hartford this summer and it was great. Stamford also has kosher food and shuls. It’s great To center Yourself I’m a new city. There’s so much to do in both
