4 chicken bottoms (or 1 chicken cut into eights)
3 potatoes, scrubbed and quartered
1 onion, sliced into half moons
¼ cup ketchup
½ cup duck sauce
1 teaspoon paprika
Salt and pepper to taste
Instructions
Place chicken bottoms in a pan. Arrange potatoes next to and in between the chicken pieces. Combine the sliced onion and rest of ingredients in a small bowl. Smear this mix over the chicken and potatoes. You can cover, label, and freeze at this point.
If preparing fresh, preheat oven to 350ºF. Bake covered at for 2 hours and then uncover and bake for 30 minutes until browned to your liking.
If freezing: Defrost overnight in the refrigerator. In the morning, place in a 300ºF oven and bake all day, covered. About an hour before serving, raise temperature to 350ºF and uncover. Bake until browned to your liking.

Chicken Stew
Cut up some sweet potato, carrots and onion into the crockpot. Poured in 1/2 cup barley.
Sprinkle lightly with salt and pepper.
Pour over some water - probably about 2 cups (the barley needs to absorb water).
Put chicken pieces on top. Drizzle them with honey, garlic powder and pepper.
cooked in crockpot all day till soft and savory. Enjoy!

YounginBP , the potatoes can be frozen raw and don't discolor or taste grainy when baked? Do you use regular Idaho potatoes?

Thanks! I guess I can try same method for crockpot?
I usually do oven, but going to be in the hospital all day tomorrow, so want my kids to have a good supper that’s ready when they get home.

This is delicious. If you're short on time and can't peel 20 garlic cloves, just use just 4 cut in half and stuff them under the skin after you toss everything together.

Slice an onion. Top with potatoes/sweet potatoes/carrots. Whatever your family likes, I do a combo.
Put the chicken on top. Spice with salt, onion powder, garlic powder and paprika and top with duck sauce.
Cook all day. Yum.
Alternatively, you can skip the spices and do a combo of duck sauce and bbq sauce.

This is close to what I do. I put it up on low late in the morning. I sprinkle pieces with pepper, onion powder, dill weed. I put in carrots, sticked, and potatoes. Or I might skip the potatoes in the crockpot and mash boiled potatoes with the gravy, or use it for rice. I do pour in a little water to start, probably not necessary.

I make this in the crockpot all the time. 6-8 hours on low. Don’t change anything at all. We all love it.
