I came across a recipe for a beef roast which calls for a very hot oven, 500 degrees. You bake it for 5 minutes per pound, then shut off the oven, and allow the roast to sit in the oven for 2 hours. That means a 3 pound roast would only be baking for 15 minutes. Th author of the recipe says it's a foolproof recipe. I'm afraid to ruin an expensive roast. Has anyone ever used a recipe such as this?

I heard of it and wanted to try. I did similar with cowboy steaks and it was delicious.

It would be baking longer, as the oven would not cool immediately.
I've never tried it, though.

I hear the logic. The roast should be browned and crispy on the outside, and still be nice and pink on the inside. But sitting in the cooling oven should still cook it slowly, so the inside won't be red. Can you post the recipe?

The cooking time for the steak was 5 min. This has longer cooking time. So yea I I think it makes sens e

Some of the pre-seasoned roasts from Seasons have these directions and they work. But I've never done it on a different piece of meat. The only thing I'd be wary of is what level of done-ness you want.

Here is the recipe for the Roast:
Ingredients
1 beef roast, approx 3 pounds
1 TBS kosher salt
1 TBS black pepper
3 cloves garlic, minced
1 TBS olive oil
Preparation
1. Remove roast from fridge 1/2 hour before cooking
2.preheat oven to 500 degrees
3. In a small bowl mix together the salt, pepper, olive oil and garlic to create a paste
4. Rub the paste all over the rroast
5.Place roast in a roasting pan , fat side up, place in oven
6.cook 5 minutes per pound
7. Turn off oven, do not open oven door, for 2 hours
8. After 2 hours, remove roast, slice, and serve

Cowboy steak is a thick (think 3 inch) bone-in ribeye (cut between the ribs). Serves 2.

I've tried it. It worked well. I did think the cooking time was longer. I tried to find the recipe that I used but was unsuccessful. The concept is that it keeps cooking from the heat of the oven for the next two hours. Perhaps you can call the butcher and just confirm with him.
