Pastrami Roast - take out of bag?

And if so, it won’t be fully submerged in water
Will it cook well like that, or dry out?
It’s a kolichel pastrami

Are you cooking it before shabbos? Take it out of the bag, quick rinse and add water to almost cover.

If you're cooking it throughout shabbos, then keep it in the bag.

Are you talking about naval pastrami ? If yes you leave it in the bag, cover with water , cover pan tightly and leave it in the oven all day on about 300’

Update from that week - it came out super dry
went to the butcher this week to ask why
He said supposed to be out of the bag - which I did...
Seems I cooked too long
Supposed to cook an hour per pound
And I did 4 hours at 350
For 2.5 lb roast cuz followed the label Sad
Was a bit sad as we had guest that weekend and it was gross

Kolichel cut comes out dry when baked. Probably better off to cook it on the stove next time.
