I've ever done much to celebrate. Since its a sunday night this year I have time to prepare!!
.what can I make / do/ have for it to be special. Super picky eaters in my house so no weird food combos if possible.

We usually do seudat amenim, with each bracha say a small tefilla for ourselves / for a family member or friend that needs that bracha:

Mezonot - parnassa
Hagafen - happy holy eternal marriage
Haetz - offspring who are healthy, happy and follow in the ways of Hashem
Haadama - health body and mind
Shehakol - anything else
Shehechyanu - ? not sure but it's an extra bracha if we can get a guava or something.

We also daven for a special etrog the following holiday season together with blessed rains in Israel.

Sing relevant songs (e.g. Ilan Ilan)

This seuda doubles as supper.

We plan to have pomegranate and dried dates, but other than that we don't go overboard on the dried fruits business. It's a lot of careful bug checking without much added value in my opinion.

I don't believe in wasting food, but sometimes when I need lemon juice I slice the lemon afterward and let it dry. Then I allow the children to use it for painting. I do the same with the peels from different fruits and vegetables. Pineapple is very good because it has an interesting texture on both sides of the peel.
Kids just dip it into paint and put it in paper. I alway explain how this is not with food we eat but the peels or used up lemon we would anyway throw away.

Spiralizer, interesting slicers, show them how to make flowers with kiwis etc and make pretty fruit platters. Chocolate dipped fruit. Flowers from toothpicks/skewers and fruit leather

We eat 15 fruits snd nuts.
My kids prepare each person a plate making sure it’s the correct amount.
