I remember a few (many??) years ago there was a one-pot chicken lo mein recipe being sent around from some website or something. I remember the picture had spaghetti sticking up out of the pot, and the veggies on the other side of the pot. Anyone know what I'm talking about? Anyone have the recipe? Or another easy chicken lo mein recipe would also help. Thank you!

Thank you so much! I need to wait for my internet filter company to approve the site, and they're being slow on this lovely erev Shabbos. Is anyone by any chance able to copy-paste the ingredients and instructions here? I'd really appreciate it!!!

Ingredients
1/2 lb. boneless skinless chicken breast -cut into small chunks
1 lb. box linguini or fettuccini pasta -broken in half (I used whole wheat)
4 medium carrots -peeled and cut in thin 3 inch long strips
1 medium red bell pepper -cut in thin 3 inch long strips
1 bunch green onions -white part sliced and green part cut in 3 inch long strips
4 cloves garlic -minced
1/4 cup soy sauce
1 teaspoon garlic powder
1 teaspoon corn starch
1 tablespoon sugar
1/2 teaspoon red pepper flakes
4 cups chicken or vegetable broth
2 teaspoons extra virgin olive oil

Instructions
Add the chicken, then the pasta, then the remaining ingredients to a large stockpot and cover. Bring to a rolling boil over high heat. Stir and reduce the heat to medium-low.
Cook covered for about 15 minutes, stirring occasionally. Cook until most of the liquid is gone and the chicken is cooked through.
Remove the lid and let the dish rest for 5 minutes before serving.

OP, let us know how it comes out. Do you make your own chicken broth or do you buy readymade broth in container?

When I make it, I usually dump in one box of broth for simplicity.

The readymade broths are so high in sodium and I can't use them. Both dh and I take meds for high blood pressure. Was wondering what other cooks do.

I would use water and salt, with garlic which it already has, to control how I want it to taste.

I only buy the low sodium ones but that might still be an issue for you, I don't know.

Shavua tov! Thanks, everyone for the help. I think the recipe worked pretty well. Was a bit overdone, but that's from being on the blech a while until we got to it Friday night. What do you do to keep food warm but not overcooked? Particularly chicken breast/shnitzel? But still very nice, although not a winner by my pickiest eaters! (but then again, what is??)

I keep 1 lb containers of my own chicken broth in the freezer. When I make chicken soup stock, or just one week's worth of chicken soup for shabbos, I stick some in the freezer. Nothing like home-made chicken soup! never bought the ready made one
