Anyone know how to make gefilte fish that tastes catered?

I recently had gefilte fish from a caterer that was really good, sweet firm and tasty.
Whenever I try it tastes off, and very mushy.
Anyone have good instructions for how to make gefilte fish?

I don’t find that catered GEFILTE tastes all that different… just a lot sweeter than most people make it.

It comes out much better if you bake it instead of boiling (or cooking in a pan with water). Have you tried that?
Just some mayo and breadcrumbs on top then bake at 350 for about 1.5 hrs

But that won’t taste at all like catered, which is what OP said she wanted to replicate. I prefer baked as well though.

You really need to buy a good brand. Not all gefilte fish brands are created equal.

Cook it uncovered so it stays firm and doesn't get water logged. Use a good quality loaf like A&B. Season the water well to make a good broth.

1 onion, sliced into rings
3 garlic cloves, halved
2-3 carrots, peeled and cut in half
1/3 cup sugar
1/2 Tbsp salt
10 cups water

Fill a 4-quart pot with 10 cups water (measure it, it's worthwhile), add onion, garlic, carrots, sugar and salt. Bring to a boil.
Add the still frozen parchment wrapped loaf of gefilte. Bring back to a boil and then immediately lower heat.
Simmer uncovered for 2 hours.

I once had one of the typical frozen loaves but it was their Hungarian formulation and my hostess cooked it with a lot of sugar. It tasted like the catered
