I'm looking for a good recipe for Salmon to make for Pesach.
During the year I love to use Blackened Redfish Magic on my salmon.

Thanks so much for your help!!

This might not be something you are looking for..
But this is what I do; I make homemade lox.

I put on nonreactive surface (ceramic flat dish, or foil covered with plastic wrap) a thick layer of kosher (coarse) salt. Then I put the raw salmon fillet on top, and cover it with a layer of salt, thick, so that you cannot see the pink at all. You can add some sugar to the salt if you want, or put some fresh dill on top of the fish. Let stand at room temperature 6-12 hours, depending on the thickness of the fish. Salt "cures" it, so when its ready, it will change texture to the firmer one. Then I rinse the salt off in cold water, wrap it in plastic wrap and freeze. When its time to serve, I take it out of the freezer and slice it in thin slices across (its easier to slice very thin when its slightly frozen still). Then I can put some veg. oil on top, and thinly sliced onion, arrange on the platter and serve. Yum.

I already made mine for Pesach..

Place salmon steaks in a baking dish. Sprinkle salt and lemon juice. Add pieces of fresh garlic and parsley. Bake until slightly brown. Delicious and healthy.

I make this most weeks for Shabbos.

You could skip the garlic and parsley - it is still delicious.

Anuta:

Thanks so much for sharing the recipe. Unfortunately, DH and I are not Lox fans, but I'm sure some other mothers here are!

Shalhevet:

Sounds yummy. Thanks for sharing!

Any other ideas?
Thanks!!
