It will give my username away if I want to post in the Recipe section, to mention an amazing recipe someone posted that I edited a bit, because Ive been talking about this all day irl.
I wish there was an anon feature on recipes too.
Id have loved to write about my variation of this amazing recipe and thank the person who posted it.
Any solution?

Write it here. After so many introductions I'm curious.

You can post a recipe wherever
I think there just isnt an anon option because usually people dont need to be anon for that

ra_mom posted it, I pretty much do my searches looking for her username, haha.
ra_mom wrote: | Zucchini Mushroom Mini Kugels
3 eggs
1 c oil
1/4 c sugar
1 1/2 tsp salt, divided
1 tsp baking powder
4 medium-large zucchini (2 peeled, 2 unpeeled)
1 Spanish onion (I use 2 medium-sized yellow onions)
12 button mushrooms
1 clove garlic
Pepper to taste
Grease muffin tins very well.
Mix eggs, oil, sugar. Add 1/2 tsp salt, and baking powder. Mix well.
Grate zucchini finely. Add remaining salt, and pour into a colander set up over a bowl or sink to let the liquid drain.
Process onion, mushrooms, and garlic in food processor. Add to batter along with zucchini. Mix to combine, add pepper to taste.
Pour into prepared muffin tins. Bake at 350 for for 30 minutes.
Remove from tins by loosening around the edges with a sharp knife. |
Briefly (Ill look over recipe after Shabbos) I used 2 onions that I sauteed w 1 lb fresh mushrooms, and peppers, only used 1/2 c oil, added almond milk like someone recommended, I added 1/2 c flour bec I thought all quiches/kugels need some flour, I used 1/4 each of 4 color peppers instead of the zucchini (no zucchini at all), and put some corn flake crumbs on top.
I got 12 very good tasting and very nice looking muffins/mini quiches.
I used these so they werent small and puny looking. https://www.amazon.com/Reynold.....28241
Amazing!
Thanks again and again ra_mom!!!

So glad to hear it worked out! That's Estee Kafra's recipe. Adding peppers sounds delicious.
