Cutlets are what's for supper.
I'm not in the mood for my regular dump sauce and grill.
Definitely not in the mood for shnitzel-level patchke.
I thought I wanted to make stir fry but I don't have enough vegetables to make it interesting.
Please post something different and delicious to do with chicken cutlets.
Note:
We have a mustard allergy so nix that whole delicious category.
If it needs any special sauces or ingredients I probably don't have it.
Preferably healthy - I don't believe in using a lot of sugar in cooking.

Chicken and brocolli
Sauté chicken strips, add
3/4 cup chicken broth
3 T soy sauce
2 tsp honey or sugar
2 cloves garlic
1 clove ginger. Cook 5 min, add
2 cups brocolli cook covered 5 minutes.
Mix 2 tsp cornstarch with 1/4 cup chicken broth. Add to pot and cook till thickens.

Fried rice- make rice (brown or white), saute some vegetables (I do frozen peas/carrots/corn mix), add bite size pieces of chicken, and add the rice in. Season with soy sauce and spices.

The recipe from fresh and easy for pesto chicken with noodles- I did it on the George Forman grill.
If you have frozen basil and garlic cubes in the house then it’s really easy.
Chicken with oil salt pepper and oregano, grill it
Sliced tomatoes, grill. (I skip this for my kids cuz they won’t touch tomatoes)
Cool up flat egg noodles
Mix basil cubes and garlic cubes with oo salt and pepper. I usually use double the amount of basil than garlic, or one less than half of garlic.
Mix everything together.

My easiest most favorite chicken cutlets recipe:
Spread out the cutlets on a baking sheet. Shmear both sides generously with duck sauce and sprinkle crispy fried onions on top. Bake uncovered for 35 min on 350 degrees. A hit every time it's on the menu!!

This is my fave recipe from The Balabusta's Choice cookbook:
Sprinkle paprika and garlic powder on cutlets. Bake for 10 min.
In the meantime, sauté an onion (cut in rings). Add 1/2 stick margarine, 3/4 cup brown sugar and 1 1/2 tbsp soy sauce. Mix and pour over chicken. Bake chicken for 20 min covered and 10 more min uncovered.

I do this with a mix of mayo and ketchup smeared on the cutlets instead of duck sauce.
On Pesach, try it with bbq potato chips.
