all of the stores in my area are out of margarine, how much oil so I substitute for one tablespoon of margarine, this is for a pot roast recipe.

I usually substitute equal oil:margarine.
Alos, just curious - why add fat to a cut of meat? Is it extra lean? I've never done that before, does it add a certain flavor? Just curious, that's all.

no idea why, the meat is not extra lean, I'm just following a recipe from a cookbook, I'll let you know how it comes out...

I only got 1 margarine, so I froze equal amount of oil.
IT WORKED!!!
No more buying Pesach margarine for me... too expensive, and nothting to do with it after Yoj Tov.
BTW - tere was a shortage on margarine this year, but if you really want it you must buy it before Yom Tov. I found that stores stokc the bare minimum of it because it doesn't sell well after.
