Pesadik Banana bread/cake?

I have all of these lovely RIPE bananas - what can I make with them for 2nd days? Any ideas? Thanks

I made this last year and it got great reviews, not sure where I copied it from though. It is a banana sponge cake really.
7 eggs, separated
2-3 (1 cup) ripe mashed bananas
1 cup sugar
3/4 cup potato starch
1 tsp cinnamon
2 cups choc chips

Preheat to 350. Beat yolks, add sugar slowly, beating constantly. Add bananas, pot starch and cinn and mix well. Beat whites till stiff and fold in banana mixture. Bake in tube pan or 9x13 for 40-45 min. Cool briefly and remove if in tube pan. Melt choc chips in saucepan and smoothe over cake as glaze.

You can skip the choc chips and maybe dust confectioners sugar over it as an alternative.

The bananas make it a moist Pesach cake. Enjoy!

Thanks. How do you think it would be if I put the chips in the mixture? Would they all fall to the bottom? Or, would they be mixed in?

BUMP = do you (or anyone else) think I can just mix the chips right in or will they fall to the bottom (that happened to me once)

I never tried putting the chips in but since it is a light cake, I would let it bake slightly before putting them in - ike 10-15 minutes maybe. You'd risk that maybe they'd stay on top but decide which you'd rather. Maybe mix in 1/2 of the chips, bake 10 min, then add the rest on top and finish baking.

I have this recipe that I was going to try today.
I don't have any cream of tartar,
but I do have KLP Baking powder and baking soda.
Anyone know how to modify this recipe?

Banana Pecan Muffins

1/2 cup oil
3/4 cup granulated sugar, or more to taste
2 eggs
1/2 cup potato starch
3/4 cup matzo cake meal
1 teaspoon cream of tartar
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
3/4 cup pecans, finely chopped
1 1/3 cups mashed banana

Instructions:
Preheat oven to 350. Spray a muffin tin
with oil or line with muffin papers.
Preheat the oven to 350. In the bowl of
an electric mixer, beat oil with sugar.
Add the eggs one at a time and continue beating.
Add mashed bananas and combine well.
Combine matzo cake meal, potato starch,
cream of tartar, baking soda, and ground cinnamon.
Add the chopped nuts and incorporate.
Add the dry ingredients to the egg - banana mixture,
until just combined. Do not over mix.
Pour the batter into the prepared muffin tins,
filling them to the top. Bake for 25 - 30 minutes
until the top is brown and a toothpick inserted
in the center has moist crumbs.

you can use any baking soda but baking powder needs pesach hashgocho.

wow - I wouldn't think a pesach banana cake would hold up - let us know how it comes out ...

as far as the choc chips I've put in a regular year-round cake and even though they go to the bottom ... mmmm it's quite yummy ...

I guess if you eat gebrocht and use matzoh meal - the cake should be good ...

and if you use regular baking soda - make sure it's a new box (never the baking powder it has corn starch)

Absolutely!
Maybe I wasn't clear with my question.

I have KLP baking powder and baking soda.

The recipe calls for cream of tartar, which I don't have.
I'm wondering how to substitute.

Well, I made the banana cake and it flopped. I didn't try the chips - I was going to put them in 10 min. in and didn't bother. I'm going to dust with sugar.
