I always have 3lb oval shaped challa pans but it never comes out nicely basicially the dough rises over the edges of the pan. How much should one strand weigh (I braid 3 never could do 6 ) to have it nicely?

I do 5 or 6 3lb loaf pans from 5 lbs of flour.

but how much does one strand weigh?

It looks the nicest when it rises over the edges of the pan! Like cupcake style.
In 3 lb pans I put 20-21 oz of dough and it doesn’t really rise over the top and cupcake over.

Yes this s where I got my number from, but with that amount of dough it doesn’t rise over the top much so I use a bit more. But it also depends how long u let it rise in the pans. I recently started letting it rise longer in the pans before baking and it makes a difference.
